Creme Brulee is a classic French dessert that consists of a rich custard base topped with a layer of hard caramel. It is typically served in individual ramekins, and can be made ahead of time which makes it perfect for entertaining.
To make Creme Brulee, you will need:-1 quart heavy cream -1 cup granulated sugar, divided -1 vanilla bean, split and scraped
-8 large egg yolks -6 tablespoons unsalted butter, melted and cooled slightly Preheat the oven to 325 degrees F. Place 8 (6 ounce) ramekins in a roasting pan.
Add hot water to the pan until it comes halfway up the sides of the ramekins. Set aside. In a large saucepan over medium heat, bring the cream and half of the sugar just to a simmer.
Add the vanilla bean and let steep for 10 minutes. In a medium bowl, whisk together the egg yolks and remaining sugar until pale yellow in color. Slowly whisk in the warm cream mixture until combined.
Strain mixture through a fine mesh sieve into another bowl or pitcher (this will remove any bits of cooked egg). Stir in the melted butter until combined then divide mixture evenly among prepared ramekins. Once cooled completely cover tightly with plastic wrap and store chilled in fridge for several hours or overnight before serving so they have time to “set” properly (custard should be firm all way through when done). To serve sprinkle each custard evenly with about 1 tablespoon granulated sugar then use kitchen blow torch* to melt/caramelize sugar until dark golden brown (be very careful doing this step as it’s easy to burn both yourself & custards if you’re not paying attention). Let caramelized sugars harden for at least 5 minutes before serving so they have time to form nice crackly topping.
